Here in the northern central desert of Mexico we have a still untapped natural resource: rattlesnake! Many people like to eat it, and I was looking for recipes on the internet, but most of it was pretty "boring".
Somewhere I read that it is considered a delicacy in China, so I want to ask you guys if you have any good recipes handy. Maybe one day we could have a ratlesnake cook-out here in Mexico. How would you like that? ![]()

Anyway, snake are consider very good for skin and it also cleanses the blood. That is why poisonous snake is much sort after by in the oriental. The blood and the gall bladder is even more precious.
You are right, it does taste like chicken and you can cook it like chicken, except remember to add chinese wine and ginger, this will remove some unpleasant taste and enhanced it medical value.
Ok, now we are getting somewhere! A rattlesnake really has more than one commercial use. While it's still alive you can "milk" the venom and sell it (I believe they use it to produce medicine), after it is slaughtered you use both the skin and the meat, and now you mention the blood and gall bladder. Hmm...

One question: why do you recommend Chinese wine for the preparation? In what is it different from other wines? I'm really curious. And if you had complete, tasty recipes, that would be great! ![]()

Yes, almost every part of the rattle is precious commodities. I have buyer of snake skin talking to me immediately when he knew I am in this forum about rattle snake.
The gall bladder are first soak in Chinese Wine and swallow whole. You can immediately feel the warm throughout your body. The blood are drank straight or mixed with wine.
Snake blood are known to be good for various skin ailments. It cleanses our blood.

We chinese uses lots of Rice Wine or Wheat Wines or mixture of rice, wheat, barley sorghum, etc..
Chinese wines like most wines from grains are high in nutrients and medical values. It also help raised the favor of the food and some inherent animal odour, like those found in beef, mutton, snake, fish etc.
Chinese wine also increases blood circulation, thus nutrients are more easily absorb by your body.
For those who are allergic to alcohol, high temperature during cooking should remove some alcohol. That is why chinese wines are added last in cooking to retain it form.

Anyway, when you said "Chinese wine" I supposed g wine, but now that you say it's a grain wine - most of the times rice - things change of course. Hopefully somebody can give us a recipe that includes rice (or another grain) wine to marinate the meat before cooking. I could imagine that to turn out very tasty. It's just too hard (and expensive in terms of time and money) to find out for myself how to do that.
You have a customer for rattlesnake products? Ask him how many he needs. There are certain areas in our desert where you can hardly get a foot on the ground because of so many rattlesnakes...

I hv spoken to him yesterday. As long as you can export, what ever the quantity of skin, they will buy.
